A Date Night For One

It’s often (these days) that I’m cooking for one. Sounds like a fairly sad sentiment, but it’s really not when ones curiosity for cooking continues to flourish. This means, the more I’m looking for new recipes, or creating my own, the more TIME I have to play around with recipes. And this means, no one pressuring me to get dinner on the table for 6:00PM!

This recipe I altered a little bit from one I had found a few years back on foodgawker. Instead of regular lean beef, I substituted it for spicy italian sausage. Like c’mon, spicy sausage and kale? That’s like putting cabbage and bacon together, or peas and carrots together – they just go!!

To make this meal seem more like a date – I did have a bottle of delicious wine present, and a charcuterie board (please note the heart shaped salami, ohhh ya) to make me feel more like a grown up. It kind of worked.

I forgot to take a picture of the kale and wine in the skillet, as I got talking on the phone with my sissy and the gab fest began (naturally), so excuse the jump from browning sausage to instant plating. Oops.

Gnocchi with Italian Sausage & Kale
Yield: 2-3 people

Ingredients:
1 pkg of gnocchi, or homemade!
1/2 tbsp olive oil
1/2 red onion, diced
minced garlic ~ 4 cloves
2-3 sausage, casings removed
1/4 cup of white wine
lots of kale! (~4-5 stalks, chopped)
salt and peper to taste
parmesan cheese, shredded

Directions:
Heat a pot of water to boiling, and add gnocchi a few minutes before the meat turns brown.
Heat olive oil on med-high heat in deep skillet
Add red onions, and saute until soft
Add sausage, breaking it up, and saute until browned all over
Add minced garlic, until fragrant
Add kale and wine to skillet and place lid on skillet to steam the kale to perfection
Once kale becomes gawg, start to combine with the remaining mixture.
Drain the gnocchi, and reserve 1/4 cup of pasta water
Add gnocchi and pasta water to meat/kale mixture, combine, garnish with parmesan cheese
And plate! And serve! And eat!
